VINTAGE CONDITIONS
Following one of the driest growing seasons on record with hot conditions throughout January, vines needed careful management to maintain healthy canopies and consistent crop levels. Warm dry weather, late in the season allowed disease free ripening and very early harvest dates. The fruit ripened consistently maintaining natural, balanced acidity and fresh varietal flavour. The 2007 blend of Semillon and Sauvignon Blanc is harvested from both warm and cool climate areas of South Eastern Australia

WINEMAKING
Semillon and Sauvignon Blanc grapes were harvested in the cool of the night from selected viticultural districts in South Eastern Australia after members' of our winemaking team had assessed the fruit in the vineyard for optimal maturity.
Upon crushing, the fruit was chilled then the free run juice was drained quickly and clarified. The juice was inoculated with selected yeast cultures which help exhibit the best aspects of the Semillon and Sauvignon Blanc varieties. Fermentation was conducted at low temperature, and there was no malolactic fermentation or oak treatment, which aids in maintaining the fresh fruit driven style of the wine. The base wines were blended soon after the completion of fermentation to retain freshness and continuity of style.

Semillon with the tropical and citrus characters of Sauvignon
Blanc making the wine a delicious choice for a wide range
of light food dishes.

TASTING NOTE

Colour: Vibrant pale green.

Bouquet: Fragrant lime citrus with underlying guava and grapefruit notes.

Palate: The wine has a delicate balance of crisp natural acidity that complements the fresh citrus flavours and ripe grapefruit that flesh out the palate. It has generous length and intensity of flavour, with a soft, elegant finish.
