Tasting Notes
Sauvignon Blanc is regarded highly as one of the world's great white wine varieties and is capable of many different expressions, depending on the region and climate in which it is grown. The Pyrenees district can produce wines of distinctive character with this variety and this wine is no exception. The fruit for this wine is wholly Estate grown.

The 2007 vintage produced very small crop levels with high flavour intensity. A mild dry growing season and summer, followed by a warm autumn enabled early ripening of the fruit flavours. The fruit for this wine was picked at 2 different ripeness points to capture the different ends of the Sauvignon Blanc flavour spectrum so the resultant wine best expresses a mix of classically varietal herbaceous flavours and some of the riper tropical gooseberry characters. Cool fermentation with 2 specially selected yeast strains has captured and enhanced the lifted varietal characters, with 5 months regular lees stirring being another important influence of the winemaker. Typically Sauvignon Blanc, this wine should be served chilled and will accompany most fish, delicate shellfish, white meat dishes or Asian style cuisine.



Tasting Notes

Colour: Bright, translucent, pale lemon with hues of green.
Aroma: Gooseberry, herbs, flint and cream notes are all evident here.
Flavour: Tropical fruit and lemongrass flavours initially give way to creaminess and a strong minerality which persists throughout this wine until the crisp lingering finish.
